Here are his thoughts on “A Need for Change.”
"My keynote will address the urgent need for transformation in the hospitality industry, highlighting the critical role chefs and educators play in leading this change. It will challenge industry leaders to move beyond traditional practices and educational models, advocating for innovation as essential to the future of our industries and our environment. Drawing from my work with EcoChef, Forward Dining Solutions, and authoring of “Understanding the Green Industrial Revolution: An Interdisciplinary Look at the Hospitality Industry”, I will make the economic case for why sustainability is no longer a trend but rather a mandate by our guests and consumers."
