Innovations
We are proud to offer two innovation panels at this year’s Deans and Directors Retreat, March 2-4, 2018 in San Antonio.
The first panel will feature:
- The James Beard Foundation’s new outreach to culinary schools to teach future culinarians how to reduce waste in restaurant kitchens
- Galveston College’s innovative partnership with their food science department
- Guilford Technical College’s successful program in Mobile Catering and Food Truck Management
The second panel will feature:
- Delgado College’s development of one-credit courses to teach trends
- Park City Culinary Institute’s designer program not dependent on financial aid
- Rouxbe’s program offering real alternatives to traditional apprenticeship models
- Barilla’s use of a 3D printer for food
The program will have sessions on active learning methods as well as hearing from Chef Charles Carroll, former Culinary Olympics participant and former president of the World Association of Chefs (WACS).
WACS is offering free curriculum in sustainability which you will also hear about from Chef Chris Koetke.
There will be time in the agenda to talk about our programs’ challenges in relevance, value, and internal versus external changes.
And the opening night meet and greet will include a stroll on the river walk to a local restaurant and a boat tour of the river walk.

Brightwater is adding new Full Time chef instructors! Are you particularly adept in any of these areas—plant-based, farming/gardening, chocolate, food systems, nutrition, charcuterie, international cookery? They are hiring 9- and 12-month positions. Brightwater serves as a hub for food training, activities, events, and business in Northwest Arkansas. In addition to workforce readiness in the expanding hospitality sector, their goal is to explore the large food world in theory and practice, specifically focusing on agriculture and food issues within the context of community development—from farms, health, food, entrepreneurship and public education.
COLUMBUS CULINARY INSTITUTE AT THE BRADFORD SCHOOL IN COLUMBUS, OHIO
They are seeking a Culinary Program Director for its Culinary Arts program. This position will report to the Director of Operations at Bradford School.
Position Requirements:
- Bachelor’s Degree or higher
- Minimum of ten years’ industry experience with five years as an Executive Chef
- Culinary Instructor experience preferred
- ACF certified as a CEC
- CCE and/or CCA preferred
Columbus Culinary Institute at Bradford School instructs more than 200 culinary students in a well-maintained facility that includes:
- 5 large instructional kitchens
- Computer lab
- Library
- 2 state-of-the-art lecture rooms
- 4 classrooms

The 14th Annual CAFE Leadership Conference will be hosted by Milwaukee Area Technical College, June 14-16, 2018.
Highlights of the event include:
Hands on Master Classes in butchering, chocolate work, and the Beard’s foundation new curriculum on waste-reducing
Opening night reception with multiple stations, beverages, music, and awards. Guests are welcome!
Full day of Industry Outreach including trends break out sessions, a keynoter on industry trends, an InfoFair and a free movie featuring Anthony Bourdain “Wasted”
James Beard Foundation panel on what is being done in the restaurant world to reduce waste and how it impacts your classroom instruction
Full day of Educational Best Practices, peer presentations on what innovations are working
All attendees are awarded ACF continuing education hours for the event.
