One of the panels at the Deans and Directors Retreat, June 22, 2022, in Portland, Maine, is titled “Re-imagining Foodservice Education.”
The attendees will hear from their peers about some new and/or revised programs around the country which may prove inspiring and educational!
The conversation will be led by Paul Sorgule, president of Harvest America and a podcast host / columnist for CAFÉ.
Featured Speakers include:
Dr. Tim Harlan will discuss a new certification program developed: Culinary Medical Professional. Hear how universities are using this approach to link food with medicine.
Karl Guggenmos (who was also involved with the culinary medicine project since its beginning) will introduce you to a new international program which has been approved by the World Association of Chefs. At-Sunrice Global Chef Academy the program includes on-line study and apprenticeship training in Asia.
Kathleen Vossenberg from Escoffier will talk about the phenomenal growth of online programs, even prior to Covid. Why and how do they and can they be so effective? What the future looks like for foodservice education options.
Jason Evans from Johnson & Wales University will describe CFIT—College of Food Innovation and Technology which is a global approach to problem solving in our industry. JWU has expanded its traditional culinary program to encompass a broader conversation around food.
UPDATE ON THE CONFERENCES in Maine!
- The 3 Lobster Boat experiences are just about fully booked. There are still seats available on Wednesday, June 22, at 3:45 pm (Boat #3).
- There is room in the Chocolates Master Class. You wouldn’t want to miss this opportunity to work with one of the best chocolate chefs in the country! The class is 9 am -12pm on June 22nd.

- There will be daily buses from the Westin Hotel to the college, except for the master classes. If you are driving, there is ample, FREE parking at the college.
