Wisconsin Cheese Externship Winners Announced
Three instructor/student teams received an all-expenses paid trip to Wisconsin for an immersive cheese externship.
Emmi Roth USA and the Wisconsin Milk Marketing Board have selected three instructor/student teams to receive an all-expenses paid five day/four night trip to Wisconsin for an artisan and specialty cheese immersion tour.
Congratulations to: Gino Anaya, University of Antelope Valley, and her student Yvonne Rodriguez; Chef Michael Kuefner, Brightwater Center for the Study of Food, and his student Erika Pearce; and Vicki Mendham, Nicolet Area Technical College, and her student Dan Resch.
The prize includes a trip to Monroe, Wis., for a cheesemaking deep dive and hands on cheese functionality session with the award-winning cheesemakers and corporate chefs at Emmi Roth USA. From there, the group will visit additional local cheese makers, a dairy farm, enjoy area restaurants and finish with a visit to the Dane County Farmer’s Market, the largest producer only market in the country.
Each team received a Roth cheese kit which included two retail cuts of Grand Cru®, Havarti, Sriracha Gouda and Gran Queso and were tasked with developing an original recipe that highlighted a Roth or other Wisconsin cheese variety.
