Hass Avocado Board Earns CAFÉ Endorsement for Series of Individual Lessons/Labs Designed for Foodservice Classrooms

The Center for the Advancement of Foodservice Education (CAFÉ) has awarded its Endorsement Program seal to a series of lesson plans designed for foodservice education provided by the Irvine, Calif.-based Hass Avocado Board.

The Board’s resources instructing on proper handling of and cooking and baking with Hass Avocados, as well as applying sound nutrition principles to concept and menu development, provide comprehensive training developed by several experts representing The Culinary Institute of America, the Culinary Institute of Charleston and the Kendall College School of Culinary Arts. Five distinct modules make up the series:

  • Lesson A/Lab Session I: “Maximizing the Avocado Yield”
  • Lesson B/Lab Session II: “The Versatile Avocado”
  • Lesson C/Lab Session III: “Healthier Baking with Hass Avocados”
  • Lesson D/Lab Session IV: “Making Delicious Recipes Nutritious”
  • Lesson E/Lab Session V: “Fresh Hass Avocados: Proper Handling”

The purpose of the CAFÉ Endorsement Program, which launched in March 2011, is to recommend select educational resources as applicable and desirable for use in a foodservice-educational environment in high schools and postsecondary schools nationwide. The Hass Avocado Board’s Culinary Lesson Plans are the first educational resource to earn CAFÉ’s Endorsement Program seal, which was awarded following thorough review by a panel of distinguished educators to determine value and relevance to foodservice education.
